New Fine Dining Option Debuts Today at Indigo Sky Casino: Shawanoe Steak & Spirits Opens Doors

Are you looking for new flavors with a fine-dining experience? Indigo Sky Casino & Resort may have just what you’re looking for with the grand opening of Shawanoe Steak & Spirits, the property's latest upscale restaurant designed to elevate the casino's culinary offerings.

“The room is beautiful, but all the servers, wait staff, and the managers are really down to earth,” Executive Chef Sterling Burpee said. “They give you service. I talked to the staff and I said, ‘you know, people want love, they want to be listened to. Let's fix the issue. Let's not let them leave unhappy.’ Those types of things are important. Serve the best food that possible. Give them the best service possible.”

Located inside the popular gaming and entertainment destination just across the Missouri border near Seneca and close to Joplin, Shawanoe Steak & Spirits promises prime steaks, fresh seafood, specialty cuts, and an extensive selection of wines and handcrafted cocktails in an elegant setting.

“We actually get our steaks from Hertzog, which is a local vendor,” Burpee said. “We do a great job with local vendors. We also have honey that we get from a local vendor. We try to do everything locally. That's very important, but the quality is more important. So we have to meet those two things and that's what we collaborated to bring to this area.”

The restaurant positions itself as a premium addition to the casino's dining lineup, complementing existing venues like Rock & Brews Restaurant & Concert Bar (which opened in summer 2025 with rock 'n' roll flair, live music, and American classics) and more casual options.

The menu highlights include expertly prepared prime steaks, seafood selections, and a thoughtfully assembled wine list to pair with dishes. Reservations are recommended and can be made by calling 918-666-9220. Operating hours are Wednesday and Thursday from 5:00 PM to 9:00 PM, Friday and Saturday from 5:00 PM to 10:00 PM, and Sunday from 5:00 PM to 9:00 PM. The restaurant is closed Monday and Tuesday.

“I believe that our shrimp cocktails are one of the best shrimp cocktails in the country.,” Burpee said when asked about his favorite dishes. “It's cold water. They're U6 shrimp. That means the size is really large. But they're tender. That's very important. Sometimes, you know, the shrimp are a little tough because they're so large. We also have one of my favorites, the spicy ahi tuna on top of a crispy rice. Nice Asian rice with a syrup and a wasabi cream. It's outstanding. They're called bites, but each bite has a lot of flavor. … We do have a pasta dish called our rigatoni Bolognese. We make fresh Bolognese and pasta in house.”

The opening comes amid ongoing growth at Indigo Sky, operated by the Eastern Shawnee Tribe of Oklahoma. The casino has expanded its appeal in recent years with additions like the Rock & Brews venue—featuring signature "rocktails," craft beers, and live performances—and continues to draw visitors from the Four States region for gaming, lodging, and entertainment.
