September is National Fruits and Veggies Month

September has been declared National Fruits and Veggies Month in the United States by the Produce for Better Health Foundation.

Kansas State University food scientist Karen Blakeslee says the fiber in produce helps improve digestion and reduce risks and effects of several diseases including heart disease, type 2 diabetes, high blood pressure and more.

Blakeslee recommends freezing, canning and pickling as great ways both to reduce food waste and to continue enjoying fruits and vegetables in the fall and winter months.
